CUL 221 - Modern Restaurant Service I
Explores the commercial foodservice industry, including rotations in the front and back of the house, and supervisory positions via the brigade system by using mock services to engage work-based learning experience and skill development. Provides students with the opportunity to apply skillsets in station design, practice of professional cooking, and service meal periods. Employs a variety of meal periods and events. Part I of II.
Laboratory 10 hours. Total 10 hours per week.
